April 2024 in the year of the Green Wood Dragon continues to unfold.  We are in the beginning of Spring, the season when the natural world revives and reinvigorates after the colder winter months.  Dormant plants begin to grow again, new seedlings sprout out of the ground and hibernating animals awake.  There is a sense of anticipation as the energy of the Earth awakens to celebrate rebirth and renewal.   continue reading »

Greetings to all my precious people!!

The month of April in the Year of the Dragon has given us pause and reminds us to expect the unexpected.  Earthquakes in Taiwan, followed by 4.8 magnitude temblor shaking the East Coast multiple times and then, the magnificent Solar eclipse this past Monday. I hope you were able to witness the phenomena outside and experience some moments of awe.  The world is filled with daily miracles and magic, if only we are still enough, and choose to be Present with our selves and the space we inhabit.   continue reading »

Braised Lentils & Kale with Fried Eggs Recipe

These braised lentils are cooked with tender kale and bathed in a fire-roasted tomato broth with an egg on top to pack in the protein. Microwaveable lentils need just a short time in the pan to finish cooking. If you have cooked or canned lentils on hand, you can use them in their place, but you may have to shave a few minutes off the cooking time so they don’t get too soft. We like how the soft, runny yolk coats the dish. If you want a harder yolk, cover the pan and add 2 or 3 minutes to the cooking time.  continue reading »
