Minestrone with Quinoa Recipe

This is a vibrant, nourishing soup that supports overall vitality and balance, aligning with the principles of Traditional Chinese Medicine. Quinoa, considered sweet and neutral in nature, strengthens spleen qi, supports digestion, and provides sustained energy without being overly heavy. The medley of vegetables—carrots, celery, zucchini, and leafy greens—nourishes the spleen and liver, promoting blood health, detoxification, and digestive harmony. Tomatoes, slightly cooling and acidic, help clear heat and nourish yin, balancing the dish’s warming spices like oregano and basil, which enhance qi circulation and support digestive function. Spinach or kale further supports liver and blood health, promoting detoxification and internal balance. At ~210 calories per serving, this fiber- and nutrient-rich soup is a light yet satisfying option, making it ideal for those seeking a harmonious, energy-boosting meal that strengthens digestion, promotes circulation, and supports overall well-being.  continue reading »
