- 2 acorn squash, halved and seeded
- 1 Tbsp olive oil
- 1 lb lean ground turkey
- 1 cup cooked millet
- 1 cup chopped mushrooms

- ½ onion, diced
- 1 tsp dried thyme
- ½ tsp ground sage
- Black pepper to taste
Preparation
- Heat oven to 400°F.
- Place squash cut-side down on a baking sheet and roast for 30 minutes.
- Meanwhile, sauté onion and carrot in olive oil.
- Add turkey and cook thoroughly.
- Add mushrooms, millet, thyme and sage.
- Turn squash over and divide filling among the cavities.
- Bake another 10 minutes.
