Ingredients
- 1¼ lbs boneless, skinless chicken breast or thighs
- 6 cups low-sodium chicken broth
- 2 cups sliced shiitake mushrooms
- 3 cups chopped bok choy
- 2 carrots, thinly sliced
- 1 Tbsp fresh grated ginger
- 3 scallions, sliced
- 2 garlic cloves, minced
- 1 Tbsp low-sodium tamari
- 1 cup cooked brown rice
Preparation
- Bring broth to a gentle simmer.
- Add chicken, ginger, garlic and carrots.
- Simmer for 12–15 minutes or until chicken is cooked through.
- Remove chicken and shred.
- Return chicken to the pot.
- Add mushrooms and simmer for 5 minutes.
- Add bok choy, scallions and tamari.
- Cook another 3 minutes.
- Divide rice between bowls and ladle soup over it.
