Ingredients

  • 4 eggs
  • 1 cup cooked brown rice
  • 1½ cups sliced shiitake or cremini mushrooms
  • 2 cups baby spinach
  • 2 scallions, sliced
  • 1 tsp sesame oil
  • 1 tsp low-sodium tamari
  • 1 tsp sesame seeds
  • Pinch ground ginger

Preparation

  1. Heat sesame oil in a skillet.
  2. Add mushrooms and sauté for 5–6 minutes.
  3. Add spinach, ginger and tamari and cook until spinach wilts.
  4. Warm the brown rice.
  5. Prepare eggs scrambled, poached or soft-boiled.
  6. Divide rice and vegetables between bowls.
  7. Top each with two eggs, scallions and sesame seeds.
