In TCM, bok choy is cooling, clearing heat and supporting Lung health. Shiitake mushrooms strengthen Qi and boost immunity. Ginger and garlic warm the middle and dispel external cold.
Nutritionally, this dish is loaded with fiber, vitamin C, B-vitamins, and immune-modulating polysaccharides from shiitakes. Ginger and garlic offer antimicrobial, anti-inflammatory, and digestive benefits.
Ingredients (Serves 2):
- 2 cups bok choy, chopped
- 6 shiitake mushrooms, sliced
- 1-inch ginger, julienned
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon tamari or coconut aminos
Instructions:
- Heat sesame oil in a pan, sauté ginger and garlic until fragrant.
- Add shiitakes, cook 3 minutes.
- Add bok choy, stir-fry 2–3 minutes.
- Season with tamari, serve warm.
