
This warming, umami-rich broth tonifies Qi and supports healthy transformation of food through the Spleen and Stomach. Leeks disperse stagnation, ginger warms Yang, and salmon or tempeh offers deep nourishment.
Ingredients
2 salmon fillets (or 1 cup tempeh cubes)
1 leek, sliced
4 cups broth
1 tbsp grated ginger
2 tbsp miso paste
1 tbsp soy sauce or tamari
1 cup spinach or bok choy
Directions

Sauté leeks and ginger for 2–3 minutes.

Add broth and bring to a simmer.

Stir in soy sauce and miso (dissolved in a little warm broth first).

Add salmon or tempeh; simmer 6–8 minutes until cooked.

Add greens and cook 1 minute more. Serve hot.
