Ingredients
1 can chickpeas, rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
¼ red onion, sliced
¼ cup parsley or mint
3 tbsp olive oil
1–2 tbsp lemon juice
Salt, pepper, oregano
