
A deeply mineralizing soup that nourishes the Kidneys and supports Liver Blood. Shiitake strengthens Wei Qi (immunity), while miso and seaweed replenish Yin and essential fluids.
Ingredients (4 servings)
1 cup cooked quinoa
1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 cup green beans, chopped
1 can diced tomatoes
4 cups vegetable broth
1 can white beans, drained
1 tsp Italian herbs
Salt & pepper to taste
Directions
- Sauté onion and garlic in olive oil until fragrant.
- Add carrots, celery, zucchini, and green beans; cook 5 minutes.
- Pour in tomatoes, broth, herbs, salt, and pepper. Simmer 15 minutes.
- Stir in white beans and cooked quinoa; simmer 5 more minutes.
- Serve warm.
